Your math is off fairly substantially.

8000rpm = 133 crank revs per second. x 16 teeth = 2133 tooth pulses per second, or 4266 transitions per second. If this is in a distributor, then it's half that. A 15kHz sensor should be plenty.

Yes, K-Jet was used on millions of Volkswagens, Porsches, and Mercedes in the 70s and 80s, and K-Jet isn't just batch, but pumps fuel in continuously while the engine is running. Works fine.

L-Jet was used on millions of European cars, and a licensed copy of it was used on millions of Japanese cars ...

O2 sensor and open-headers

If you get your VE tables set up correctly, you can disconnect the O2 sensor and run open-loop 100% of the time. The O2 sensor is there to allow for not having the VE spot on, and for changes that aren't exactly accounted for by the other sensors.

Yup. The electrical connection is only there to run a heater. The basic device simply uses a bimetallic element to phyically open and close a shutter in the air bypass. Any L-Jet or K-Jet cars should be able to donate theirs. Millions of these cars were made during the 70s and 80s, primarily German and Swedish, but plenty of Italian cars from the 80s used these systems, too.
