New engine on MS

Would like an opinion for the following : was planning on putting my engine on ITB's with Megasquirt. This is a brand new engine and has to be started in the next couple of days. Since the tuning of ITB's is not simple, I was thinking of starting her up and breaking her in on a carb and manifold.
Would it be any use to hook up all the sensors and megasquirt without using the injectors and get an idea of the amount of air it uses and so on ?

You can certainly do that. you can confirm all sensors ie. afr etc.
You, of course, would be able to log those sensors also.
I have read posts from a number of users that have done exactly that.

By MS. That way my ignition table would be close to what I would finally need when putting on my EFI intake and the rest.

MS is capable of controlling a variety of electronic ignition systems. What do you have in mind?

regular GM computer controlled ignition.

That should be a piece of cake! There are a lot of MS users here running GM ignition systems. I have run 7 pin HEI in the past.

Virtually all the information you will need is located in the MegaManual such as:

Take a look at the manual and you will find most of what you need.
