I can get a bunch of colored wires at work but they're only rated to 230 F, some rated to 195 F. What are harness wires normally rated to?

Automotive engine wiring is rated at 125C, which I believe is close to 260F. Your 110C wiring should work as long as you keep it away from high temp heat sources. If you need to route past things like an exhaust manifold, stay as far as away as possible and use some kind of protective covering, like a high temp convolute or reflective sleeving. Both of which can be found at a performance auto store. Convolute does come in both low and high temp flavors, so make sure you get the right one.
