The IAT don't have tobe in the plenum .And sometimes it can help to have it in the intake pipe to avoid heat soak.

I had big problems with my original mounting. It was located below the filter in an ally filter tray on top of the throttle body. What happened was after running and then turning off the ally would heat soak and heat the air around the sensor. Then on a hot restart the IAT reported a very high temperature causing the ECU to inject less fuel, because it would work out that less air should be reaching the cylinders. The net result was a lean mixture, causing bucking etc. This would last a good 5 mins and you could see the IAT slowly returning to normal as the area around the sensor cooled back down. Using a probe I confirmed that the air going into the engine was considerably less hot than the IAT was suggesting. In my case the solution was to move the sensor outside, above the filter mounted on a fibreglass bracket (to reduce any heat soak) and now it works just fine.
Moral of the story: Think carefully about the sensor position
