They each have their strengths and weaknesses, see my recent post on the uSquirt forum above. MAF support is somewhat sketchy at this point and you'd be one of the very few using it (I'd guess that 98% of MS installations use SD).
Yes, changing mechanical aspects of an SD installation quite often requires retuning while MAF is more tolerant of such things. Tuning SD (or any other fueling algorithm) is pretty easy the second time.
