Can this one be used with a 36-1 wheel, mounted on the crank shaft ?

A alternative is this one, it has 3 wires, so i think it is a Hall sensor.

Yes, just be sure the tooth size is within spec.

Three wires does not automatically mean a Hall effect sensor; Bosch systems often used 3 wire VR sensors, with the third wire being a shield.
