I know that the ve table will show the areas to tune.
What would cause the ve table table to turn blue and then cause the car to run badly. It seams like it`s temp related at 180 deg.

The table turns blue when you have a really unusual value somewhere in the table. Say, for example, your VE values are are around 15 increasing smoothly up to 80. You'll see the color changes reflecting the increase or decrease in the VE values. If, however, you enter a really unusual number in the table somewhere, the whole table will turn blue, showing the difference between that value and the rest of the table. Look for an unusually high or low value somewhere in the table.
The VE table does not show you where to tune. Some sort of feedback is needed, usually from an O2 sensor and/or a datalog.
The running poorly when warmed up could be caused by a few different things. Start by logging your AFR's after warm-up and manipulate the VE table to dial them in. Then, go back and check all your WUE and ASE settings.
