Funny it doesn't seem that chilly....

I must be missing a step. I'm getting only readings of -40 degrees F on both my MAT and my Coolant temp sensors. Yesterday it was over 90 degrees, so I should think they'd return at least ambient air temp. They never budged as the engine ran, and of course it wouldn't stay running with the max enrichment going on. They are connected to the MS thru the relay board. This is a 350 with a Rochester TBI and MS 1 in fuel only mode. The temp sensor for the gauge operated fine.

Do the inputs respond normally to a Stimulator?

Check the voltage at the MAT and CLT terminals with the key on; what do you read there?
